I make this bread constantly, since we always seem to have bananas going old. It is so good and really addictive. Make it!
1 1/3 cups unbleached flour
2/3 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 medium, overripe bananas
1/2 cup granulated sugar
1/4 cup canola oil
6 Tbsp soy milk
2 Tbsp lemon juice
2 tsp cinnamon
2 tsp vanilla
1. Preheat oven to 350 degrees. Grease a 9 by 5 loaf pan.
2. Sift dry ingredients together in a large bowl.
3. in another large bowl, mash bananas with a fork and add wet ingredients. Mix well and add to dry ingredients.
4. Pour into greased loaf pan and bake 50-60 minutes.
